According to the nature of the soil, the slope and the exposure, each plot of our vines produces a slightly different wine. Our main focus, from the planting of the vines to the checking for ripeness is to nurture this identity. It is this typical character that we strive to reveal through our precise and sensitive wine-making techniques. Extraction is gentle, fermentation is perfectly controlled and protection against oxidation and other potential shortcomings is monitored.

According to the grape variety, the choice of shavings for the ageing of our wines is made on the strength of many years experience. At the time of blending, the combination of unique flavours from specific plots will produce the complexity and inimitable character of each of our vintages.
